Paleo - Week 1 success

So I shared with you last week that our family was striving for more healthy meals by following the Paleo plan. Simply put, we have been eating real food all week.. no processed junk, no sugar unless it's in fruit or honey or our new favorite dark chocolate almond milk, no pasta or bread and no dairy (although I refuse to give up my morning coffee and I do add milk to that.) We've eaten tons of fruit, veggies, lean meat, eggs, coconut oil, nuts, almond milk and peanut butter. My husband and I have already noticed more energy and have lost weight. The goal for me was not to lose weight, but instead properly fuel my body with real food. I lost a couple of pounds unintentionally even though I've been eating all throughout the day...never feeling deprived!

I've tried lots of new recipes this week and all have been fabulous! If you are interested in trying out Paleo or are already following the plan and want some fresh recipes keep reading.

Breakfast:
Scrambled eggs and turkey bacon

Smoothie (I threw some ingredients together and was very pleased with the results!)
  • Silk dark chocolate almond milk (this does have sugar so you could also use plain almond milk or soy milk to cut out some grams of sugar.)
  • 2 Tablespoons of natural peanut butter
  • 1 banana
  • 1 Tablespoon of unrefined coconut oil
  • 1-2 Tablespoons of ground flax seeds (optional)
  • Ice     
 Lunch:

*I have to pack my lunch each day because I teach at a preschool. Not much prep time!
Natural peanut butter and apples
Turkey bacon (make extra in the morning)
Leftovers from dinner the night before
Fresh fruit and vegetables

Dinner:
Grilled kabobs
  • Vinaigrette marinated chicken breasts cut up in small pieces
  • green bell peppers
  • onion
  • pineapple
Ultimate Paleo Chili - I was unsure of this recipe because it calls for a cup of coffee and all kinds of spices I only use when making desserts, but I'm so glad I tried it. We ate an extra bowl of chili as a late night snack and again the next day. Next time I'm making a double batch!

Creamy Roasted Chicken Breasts with Mushrooms - paired with asparagus that I cooked on the stove in the same pan I used to saute the mushrooms and onions.

Rotisserie Chicken paired with a green salad topped with avacado and strawberries - chicken was already cooked from Wal-Mart. It was church night and just didn't have time to cook. Great option when you're in a hurry!

Snacks:
Paleo Peanut Butter Cups/Primal Fudge - You guys, these saved us! If my husband or I were feeling weak or just needed a little pick me up we'd grab one of these babies and all was right with the world again. You won't believe how good they are and how EASY they are to make!

Raw nuts
Apples or bananas with natural peanut butter and a T of raw honey
Jerky




You have to try these!

I hope this gives you an idea into what a week on Paleo is like. More energy, less weight, never feeling deprived, a bit light headedness in the beginning if you are used to eating lots of processed foods, but just keep reaching for those healthy foods and you won't regret it! Off to the store to stock up for week 2!
